I'm thinking about trying this game, but since its on so many platforms I'd like some feedback on which platform to get it on.  Is there much differences between them?  My first impulse is to get it for PC.  Unfortunately I can't get it for the Xbox since its not backwards compatible.

I have it for the PS2 and it looks great on my PS3, and I think Chris had said the GC version got some good reviews as far as graphics are concerned.

But the xbox version was considered to be the best one and since the PC is likely a port of the xbox version, it is probably the best one, graphics-wise. Just make sure you have a controller for your PC.
