BTW, I just ordered Order of Ecclesia at GS alrady.
In my opinion Castlevania: Symphony of the Night is the best in the series. At one time I held it as the greatest game of all time, but in playing it on the PSN recently, it has lost some of it's charm over the years.
If you have a PSP, I HIGHLY reccomend getting Dracula X Chronicles. It's got 2 versions of Rondo of Blood (my favorite, very difficult though) and Symphony of the Night. Symphony is the sequel to Rondo, so you've got two in chronological order .
I have a DS and PSP, just if anybody asks.
Personally I like both of the DS games better than the PSP game. But all are solid - I would chase the lowest points!

Since this is in the "DS" thread SOTN isn't an option.
We got two games: Dawn of Sorrow & Portiat of Ruin. You can't go wrong with any of them. Both are amazing. I recommend both.

He said he has a PSP as well. I played a bit of the PSP version, and while I still don't love' it as much as the DS versions (which I feel have benefitted from the years of evolution), the PSP has 2+ games and is selling for bargain prices.
I personally can't stand the "improvements" to the voices and lines in Symphony of the Night in the Dracula X Chronicles version. They ruined the "What is a man?" line, which was gold. SotN, in my opinion, EASILY stands the test of time. I played it several months ago, via the PSN, and couldn't put it down.
I agree with ShadowMasterX.Symphony of the Night has probably aged better than just about any other Playstation generation game. With that said, it's still a fantastic game. You owe it to yourself to play it.
I'm playing Portrait of Ruin right now. It's great, but I think Dawn of Sorrow was the better of the two.
I really need to get ahold of Symphony of the Night.
